Tropical Fruit Salad with Mint

I’ve been on a bit of a plantain kick lately. They are so wonderful! Grilled, roasted, fried… they’re like, the new Sweet Potato. No, just kidding. I still love my yams but plantains have been kickin it in my kitchen for the past month or so. Here’s a heavenly little fruit salad that includes my beloved plantains. Make sure to get ripe ones (at the very least make sure they are yellow/blackish and a bit soft.)

Enjoy this refreshing snack after an intense workout or maybe bring it to your weekend BBQ.

Goes great with some Jerk Chicken and sautéed greens!

Tropical Fruit Salad with Mint

1 ripe plantain
1 mango (or papaya)
a few sprigs of mint
dash of sea salt

  1. Cut plantain lengthwise and grill or roast at 400 for 5 mins.
  2. Cut up plantain into large chunks.
  3. Cut up mango into large chunks.
  4. In a bowl toss the fruit with some salt and mint.
