Two-Bite Chocolate Chip Cookies

My first kitchen. Not quite at cookie baking age yet…

Some of my earliest memories in the kitchen involve making chocolate chip cookies from the Betty Crocker Recipe book. You know, the ones with Crisco shortening, butter, brown sugar AND regular sugar. I made them all the time; they were simple and didn’t require adult supervision. Plus, I could eat all the cookie dough I wanted (which we all know is WAY better than the final product).

Nowadays, my tummy (and my thighs) would have a difficult time managing Betty Crocker cookies. So I appreciate this very tasty and less-hydrogenated-vegetable-oil-based version.

The Joy of Cookie

Two-Bite Chocolate Chip Cookies

based on my Rosemary Pecan Cookie

1 1/4 c. almond flour or almond meal
½ c. Enjoy Life chocolate chips
1/4 c. coconut oil
2 Tbsp. Grade B maple syrup (can use less, I used 1 T. honey)
1 tsp. vanilla extract (alcohol-free)
1/4 tsp. baking soda
Pinch of sea salt

  1. Preheat oven to 350º.
  2. In a medium bowl, combine almond flour, salt, and baking soda.
  3. In a small bowl, whisk together oil, syrup (or alternative), and vanilla.
  4. Mix wet ingredients into dry. Fold in chocolate chips.
  5. Line a baking sheet with parchment paper. Form dough into ½- to 1-inch balls and press onto prepared baking sheet. (If batter gets sticky, add some coconut flour before forming cookies.)
  6. Bake for 6–7 minutes, until golden. Cool on baking sheet.

Makes about 12-14 cookies
