Pumpkin Chili

Chili is a great solution to any freezing winter evening. This chili is wonderful for the holiday season because of the addition of pumpkin and warming holiday spices like nutmeg, cinnamon, and ginger.

Enjoy with some sweet potato fries and top with avocado for a completely satisfying meal.

Pumpkin Chili

1 lb. ground beef
1 can diced tomatoes
1 can pumpkin puree
1 red bell pepper, diced small
1 onion, diced small
3 cloves of garlic, minced
2 carrots, diced small
1 Tbsp. cinnamon
1 Tbsp. cumin
1 Tbsp. chipotle powder
1 tsp. smoked paprika
1 tsp. onion powder
1/2 tsp. nutmeg
1/2 tsp. ground ginger
salt and pepper to taste

  1. In a medium pot, heat olive oil and add beef, onion, garlic, and spices.
  2. Add peppers and carrots, stir.
  3. Add pumpkin and tomatoes.
  4. Let simmer on low for 45 mins.
  5. Add salt and pepper to taste.
