Pineapple Coconut Frozen Treat

I was toying with calling this “soft serve” but it didn’t feel right. It’s certainly not ice cream, and “smoothie” also kind of missed the mark. So I figured “frozen treat” was the best I could do. It’s cold. It’s a treat. So there you go.

Normally I’m not a big fruit-eater but today I was needing a bit of an afternoon fuel-up. This morning I hit up the local bootcamp gym for an hour of grueling exercise. Super fun but pretty tiring. And then I decided to unwind with an hour of heated yoga. Needless to say, I was pretty ready for a nap. So I give you my afternoon, post-nap “pick-up”.

Pineapple Coconut Frozen Treat

1 c. frozen pineapple pieces
1 banana (fresh or frozen)
2 Tbsp. coconut cream (the thick coconut milk from the top of the can)
a few tablespoons almond milk
1/4 tsp. ground ginger
dash of salt
pinch of lime zest

  1. Add pineapple, banana, coconut cream, and almond milk into a small food processor or high-powered blender.
  2. Add ginger and salt, blend again.
  3. Serve with lime zest.

    Super yummy! Not a fan of ginger so replaced it with cinnamon. This is a keeper!
