Walnut Chocolate Chip Cookies

Cookies and Flowers. Is there any greater combination in this world? No. There isn’t.

Another great combination is walnuts and chocolate, just ask a brownie. There are a ton of nut butter cookie recipes out there and to my dismay, there weren’t any using walnut butter. So I decided to try one out myself.

These are very simple to make and if you have a food processor, you can make the nut butter at home. Walnuts have a ton of natural oils so the batter gets pretty oily. To make less oily batter, make a batch of half cashew/half walnut butter. Check out this post for a refresher on how to make nut butter!

Walnut Chocolate Chip Cookies

1 c. walnut butter
1/2 c. coconut sugar
1 egg
1 tsp. vanilla extract
1/2 tsp. baking soda
1/4 tsp. sea salt
1 c. chocolate chips

  1. Preheat oven to 350
  2. Combine sugar and egg in a medium bowl.
  3. Add walnut butter, vanilla, baking soda, and sea salt until combine until smooth and sticky.
  4. Fold in chocolate chips.
  5. Using a cookie scoop, scoop batter onto a parchment-lined cookie sheet.
  6. Bake for 12 mins or so. Until edges are golden. Don’t overbake! They will firm up once they cool.
