Super Seedy Bars

I feel like I’m always describing my recipes as “super easy” and “really simple”. Not to sound like a broken record, but this one is easy AND simple. What can I say? I feel like good healthy food doesn’t need to be complicated in order to be delicious. So I’m just going to keep on sharing!

Super Seedy Bars

10 medjool dates (depending on size and moisture)
1/4 c. unsweetened coconut shreds
1/4 c. sunflower seeds
1/4 c. toasted pumpkin seeds
1/3 c. dried organic cranberries (alternatives: raisins or dried blueberries)
2 Tbsp. cacao nibs
2 Tbsp. flax seed
salt to taste

  1. Add pitted dates to a food processor and pulse briefly to break up.
  2. Add remaining ingredients and pulse until mixture begins to clump together. (don’t just press ON and let it whirr around, you want the seeds to remain somewhat intact)
  3. Press into a plastic tupperware for easy removal. These bars tend to be easier to cut if they are cold, so chill them for a few hours and then remove to cut.
