Pro Tip: Walnuts are really cheap right now. Everywhere I go I see per pound pricing that I could only dream about a few short years ago. So go out and stock up on those tasty little nut-ggets!

While staring at my pantry full of walnuts I felt the sudden need to make some copycat Lara Bars using some bright and refreshing citrus zest! So I rummaged out my microplane and made these tasty, summery bars.

Not only are they a really delicious summer snack, they are also chock full of dates. Dates have been recently studied for their effects on potentially shortening labor times during childbirth. Well heck…in that case, I may eat the whole pan. Countdown to the baby’s arrival is on, so you can find me in the kitchen concocting as many date recipes as I can manage 🙂

Citrus Walnut Bars

Citrus Walnut Bars

2 c. walnuts
1 1/2 c. dates, pitted
1/4 lemon, zested
1/4 orange, zested
2 Tbsp. chia seeds
salt to taste

  1. In a food processor, blend walnuts until crumbled.
  2. Add remaining ingredients and process until sticky.
  3. Press into a flat square tupperware and chill to harden.
  4. Cut into bars.
