Bruschetta BLT Bites

Has anyone had a pet get sprayed by a skunk? I hadn’t, until last weekend. My pooch decided to go investigate a funny looking cat across the street and BAM. Smelly Dog.

Nothing like cleaning up a skunk-y dog at 9:30 pm on a weekend night. What would have really made it interesting would be if I had also gone into labor… luckily we were only tasked with pet parenting that evening. Still waiting for our human puppy to show up!

While I wait, I’ve been getting a little more creative in the kitchen to pass the time. I loved the idea of a BLT appetizer and wanted to incorporate the fresh summery flavor of bruschetta. All these specific ingredients can be found at your local Trader Joe’s, but other versions are easy to find at most grocers.

If you’re a lover of basil, swap out the mixed greens for a basil leaf!

BLT Bite

Bruschetta BLT Bites

1 large yam, sliced into thin rounds
1/2 lb. bacon
1/2 c. fresh bruschetta
handful of mixed greens or romaine pieces

  1. Preheat oven to 375.
  2. Lay out yam slices on a baking sheet and bake until soft and edges are crispy 15 – 20 min.
  3. Lay out bacon on a baking sheet and bake until crispy 10-15 min.
  4. Assemble bites with yam, then greens, then bacon, then bruschetta.
  5. Serve warm or cold.
