Curried Tuna in a Jar

Curry is wonderful. It’s so exotic and exciting! It makes any dish instantly more awesome. Like tuna salad.

I know what you’re thinking… “but Nikki, tuna salad is already so exciting! How could you possibly make it better than it already is?” Answer: You guessed it, Curry Powder! You’re so smart. You deserve a big helping of Curried Tuna Salad.

This particular recipe is my personal answer to making a healthy Paleo lunch-on-the-go. I work in a kitchen and there is lots of food available food ALL. DAY. LONG. In order to not become obese, I have to make it a rule to not eat while at work. Which means I bring my own food to eat. Yes, I give up free, abundant food everyday so that I don’t go to crazy snacking land.

Curried Tuna in a Jar

4 cans of tuna, drained
1/3 c. homemade mayo
4 celery stalks, diced
1/2 red bell pepper, diced
1/2 red onion, diced
1/2 c. raw cashew pieces
2-3 Tbsp. curry powder (i used the yellow one from Trader Joe’s)
2 tsp. garlic powder
2 tsp. sea salt

  1. Put all the vegetables in a bowl

    oooo. colors
  2. Add tuna.
  3. Add spices and mix.
  4. Add cashew pieces and mix.

    OM NOM NOM NOM
  5. Add mayo and mix thoroughly.
  6. Divide among 4 16 oz. mason jars.
