Paleo Chocolate Chip Cookies

One of my new products for sale at the local natural foods market is a coconut flour-based paleo cookie. In the past week I’ve introduced two different seasonal flavors, Gingerbread and Peppermint Hot Cocoa.

Here’s a little sneak peek at the next flavor. I figure you can never go wrong with a classic. Me thinks this will be a great seller!

Chocolate Chip Cookies

3/4 c. coconut flour
4 eggs
1/2 c. coconut oil
1/2 c. raw honey
1/2 c. organic chocolate chunks
1 tsp. vanilla extract
1/4 tsp. sea salt

  1. Preheat oven to 400.
  2. Line a baking sheet with parchment paper.
  3. In a medium bowl, mix eggs, honey, oil, and vanilla.
  4. Add coconut flour and salt.
  5. Stir in chocolate chunks.
  6. Use a cookie scoop and drop little cookie dough balls on the baking sheet
  7. Bake for 13-15 mins.

    how many servings to this receipe? im trying to fit it into my macros lol

    1. I don’t have either of those numbers. I haven’t made these cookies in a while so I don’t want to give you a number that may be off. I do remember the recipe making more than a dozen though. Probably more like two dozen. I suggest making the recipe and based off of how many you make, plugging in the recipe to nutritiondata.self.com. That should give you some pretty accurate numbers.
