Guacamole Deviled Eggs

Snack Attack!

Yes, I did bring this to my Super Bowl Party. They were incredibly easy to make, totally paleo, and a major crowd pleaser.

They ALL were eaten by the end of the game… except for the four that I saved in my fridge because I had them for breakfast this morning (with bacon on top)!

Other reasons to make these paleo perfected deviled eggs:

  • they are easy on the household budget
  • a great afternoon snack
  • kids love them
  • easy to eat
  • full of great fats and protien
  • very low carb

Guacamole Deviled Eggs

12 hard-boiled eggs

3 avocados
1 garlic clove, minced
1 tsp. red pepper flakes
salt and pepper

2 tsp. dijon mustard
1/4 c. olive oil mayonnaise
1 tsp. hot sauce
salt and pepper

  1. Slice hard-boiled eggs in half and remove the yolks. Place yolks in a small bowl.
  2. In the yolk bowl add mustard, mayo, and spices. Whisk it all together until smooth.
  3. In another bowl, mash together avocado, red pepper flakes, garlic.
  4. Using a small spatula or spoon, fill egg with yolk mixture to the rim.
  5. Using a small scoop, top yolk mixture with guacamole.
  6. Garnish with chili powder or bacon bits!
