Chewy Paleo Brownies

These brownies are God’s gift to paleo desserts. Honestly, I have such a hard time finding legitimately healthy sweet treats under the moniker of “paleo”. Granted, I have been a contributor to the paleo-faileo desserts. One’s which contain honey, raw sugar, honey, maple syrup, coconut sugar, etc. Don’t get me wrong… I love sweet paleo treats, they are delicious and have the added benefit of not completely obliterating my digestive system.

These brownies are sweetened with dates. Yes, dates are sweet like sugar BUT they also have an impressive list of nutrients. They contain a variety of vitamins and minerals like calcium, magnesium, copper, manganese, vitamin A, potassium, and fiber.

This batter can also handle additional ingredients like chocolate chips, walnuts, dried cherries, etc. I added mini chocolate chips for my hubby’s graduation party. Smiles all around!

UPDATE: Makes 12 bars. 275 cals. each

Chewy Paleo Brownies 

1 c. almond flour (not meal)
¼ tsp. sea salt
¼ tsp. baking soda
4 oz. baking chocolate (100% cacao)
7 large Medjool dates, pits removed (make sure they are soft)
3 eggs
½ cup coconut oil, melted
½ tsp. vanilla extract

  1. Preheat oven to 350.
  2. In a food processor, pulse together almond flour, salt and baking soda.
  3. Pulse in chunks of the dark chocolate until the mixture looks like coarse sand.
  4. Pulse in dates until well mixed.
  5. Add in eggs.
  6. Blend in coconut oil until mixture is smooth.
  7. Smooth mixture into a greased 8 x 8 inch baking dish.
  8. Bake for 20 minutes or so.
  9. Cool for 2 hours before serving.
