Avocado Mayonnaise

Delicious, just delicious. That’s what this stuff is. I mean seriously, who doesn’t love avocado? It’s the most perfect food. It should be added to everything. If I started my own eatery, it would be called Avocado… or maybe Aguacate (avo in Spanish; so fun to say!)

Avocado Mayonnaise

2 egg yolk
3/4 c. olive oil
sea salt to taste
1 1/2 Tbsp. lemon juice or apple cider vinegar
1 ripe avocado

  1. Whip yolks in a small bowl until they begin to lighten in color.
  2. Slowly, while whisking egg, add in olive oil in a small steady stream. Mayo will thicken.
  3. Using an immersion blender or small food processor, blend avocado into the mayo.
  4. Whisk in additional ingredients to taste.
