Coconut makes another guest appearance on the blog! I’m pretty sure I can’t go more than a week without developing some sort of coconut-based recipe. Clearly, I need help.
These guys are great for a post-workout snack or an early morning pre-surf boost!
Coconut Energy Cubes
1 c. coconut butter (homemade is easy! Try it here.)
1 3.5 oz. bar dark chocolate (70 percent or higher)
1/4 c. goji berries
1/4 c. sunflower seeds
1/4 c. pistachios
sea salt to taste
optional:
1 Tbsp. instant coffee crystals or ground espresso
other nuts/dried fruit
scoop of protein powder
- In a sauce pan, heat coconut butter on low, constantly stirring to melt.
- Once the butter is warm, remove from heat and add in chocolate and stir to melt. Mixture will be a bit more smooth with the addition of the chocolate.
- Add any nuts, dried fruit, coffee, etc.
- Spoon into a clean ice-cube tray.
- Refrigerate until set.
