Chocolate “PB” Balls

If you do not understand the quotation marks in the title, they mean that these lil’ guys do not have peanut butter. That means they are paleo and a good snack for all our peanut-allergic friends.

They are also highly addictive, so I suggest that you make them when there are people around so you can hand them out quickly. Seriously. Heed the warning.

Usually I use Medjool dates, but trader joe’s has been majorly disappointing me with their lack of dates. Apparently they are “temporarily out of stock”. That leaves me to fend for affordable dates in other places. Fortunately, I found a huge bag of Deglet Noor dates at Ralphs for 6 or 7 bucks. I had to use more Deglet Noor dates to get the same sticky consistency that I get when making other “date-based” treats. Medool’s are often larger and more moist so if you have them, I would use less and then add more if the mixture is still too dry.

Chocolate “PB” Balls

2 1/2 c. deglet dates
1 1/2 c. unsweetened shredded coconut
1/2 c. sunbutter
1/4 c. cocoa powder
dash of salt

  1. In a food processor, combine dates and coconut until thoroughly mixed. 
  2. Add cocoa, salt, and sunbutter and process until sticky.
  3. Roll mixture into small balls and store in the fridge. or eat. or both.

    Those sound yummy, question though – TJ’s sunbutter has a fair amount of sugar – is there another alternative??

    1. The same brand is also sold at health food stores like whole foods. The “organic” one is only made with sunflower seeds. There are also other brands of sunflower seed butter, but it just depends on where you live. You could always grab a bag of roasted sunflower seeds and make your own butter!
