Chunky Monkey Cookies

Our new pup is amazing. So obviously all blog posts need to begin with a picture of him.

I mean, seriously…

So, my neighbor has a huge banana tree in his front yard and it’s chock full of ripe bananas. I have no clue why they are not taking advantage of the free food on their property… but I will certainly take them off their hands. I mean, why leave them to the bugs when I can use them for delicious baked goodies?!

I’m a sucker for quick and easy recipes. This one beats them all. It’s fundamentally a 2-ingredient cookie! WHAT?! that’s cray! Thank you to Grok Grub for the awesome recipe.

I ate these for dessert AND for breakfast. They contain loads of healthy fats and carbohydrates!

I decided to add a little flair to them by using the Ben and Jerry’s Chunky Monkey ice cream as inspiration (best ice cream flavor EVER).

Chunky Monkey Cookies

1 banana
3/4 c. unsweetened shredded coconut
1/2 c. chopped walnuts
2 pinches of sea salt

optional: cinnamon or mini chocolate chips if you’re feeling frisky.

  1. Preheat oven to 375 and line a cookie sheet with parchment.
  2. In a food processor, pulse coconut, salt, and banana until gooey well mixed.
  3. pulse in walnuts until incorporated but don’t grind them down too much.
  4. Shape dough into small rounds and bake for 20-25 mins.
