It’s seriously unreal how delicious this was. It was so delicious, that it is replacing our Thanksgiving TURKEY this year.

Yep, the pig is on the menu!

I have SOOOOO many cookbooks and recipes stashed in binders and I’ve really been wanting to experiment more and try out some of these inspiring creations. This one was so easy that I had no excuse not to try it.

We had a 3.5 lb. shoulder roast (see my grocery post here), so there was plenty to go around for a few days. We also cooked it up with eggs and hot sauce. It was great in lettuce wraps. I used it as a “stand in” for carnitas.

All it took was some salt, pork, bacon, garlic, and a slow-cooker…. and 16-20 hours of patience!

    i GOT THE NOM NOM COOKBOOK A FEW MONTHS AGO AT WHOLEFOODS MKT.
    LOVE IT, IT’S SO EASY TO USE AND LOVE THE PICTURES. THE CRAB CAKES ARE AMAZING. I’LL NEED TO TRY THE KALUA PORK SOON.
