Plantain Cubano-Style Sliders

This one was born out of my husband’s love for Cubano sandwiches and a fridge stocked with plantains and pork sausage. Also, if you’ve never seen the movie, Chef, go out and rent it right NOW. Not only is it incredibly entertaining and heart-warming, it will also make you want a Cubano. Usually they’re made with shaved ham, french bread with tons of butter, mayonnaise, dijon mustard, swiss cheese, pickles, and more ham. My version is a little more paleo but definitely doesn’t skimp on flavor.

Pickles are a new favorite in my house, and it has nothing to do with my current pregnant status. My better half has recently rediscovered his love for pickles and I feel obligated to keep some on hand at all times.

Hear me out: Don’t pass on the pickle. The salty/sour taste is essential to complementing the fatty and sweet flavors of the pork and plantain. Just trust me!

Plantain Cubano-Style Sliders

2 yellow plantains, peeled and sliced into 1/2 inch rounds
1 lb. pork sausage, formed into 2 oz. patties
1 dill pickle, sliced thin
2 T. dijon mustard
2 T. coconut oil
1 T. grass-fed butter

  1. Heat coconut oil in cast iron and fry plantains until golden on each side.
  2. Remove plantains and fry sausages until cooked through.
  3. Using the bottom of a glass jar, smash plantains into flatter rounds.
  4. Cut a small sliver of butter and place on top of 1 plantain round.
  5. Stack with sausage patty and add a slice of pickle and a dab of dijon mustard.
  6.  Top with another plantain round. Assemble the rest of the sliders and serve!
